Yes, you can set the delivery/pickup times to be whatever you like. You can block off when you're fully-booked. You can even set different times based on the type of order (delivery, pickup, holiday). For example, you can lets customers choose any time for Pickup, but restrict times they can choose for Delivery or Thanksgiving.
You can let Customers choose specific times or arrival windows so you can have wiggle room if you need it. This helpful if you need to send multiple orders for the same time in the same delivery truck.
HoneyCart lets you control Lead Time so customers can't order past a certain time. Also, you can control when the customer gets charged so you have time to Reject the order if you can't do it.
